The pipes that actually do the heating do it in the upper area of the vat meaning the fat in the upper cooking area is much hotter than the fat in the lower levels. In practical terms this means that when any batter falls off the fish or whatever else it is that youre cooking, it falls to the bottom of the V shaped vat, where the fat is cooler and so it does not burn and from where it can be removed.
Expired batter is easily removed when the fat cools using the fryers drain valve. This means that the oil stays cleaner for longer, meaning the fat needs changing less often. And for outdoor chefs it means that their deep fried food tastes great because its not cooked in scorched old batter.
